How to Make "Skinny" Chicken Salad

If you love chicken salad, but stay away from it while watching your diet, we have created a delicious skinny-version, eliminating that one ingredient that we need to stay away from if trying to lose weight and eat healthy – yes, you guessed that one ingredient to avoid is … mayonnaise!

Mayonnaise is a definite no-no for your waistline and your overall health.  It contains the bad fat,  and even the mayonnaise versions  that are  labeled  “no fat” and “low fat” are also a no-no!

This recipe tastes so good and it is filled with nutrition!  It’s super easy and fast to put together, as well!  We promise you won’t even miss the mayonnaise.  You can eat it in  a variety of ways….by itself is always good, on top of a salad of greens, over spinach leaves or  wrapped in lettuce or a whole wheat tortilla.  This recipe will certainly be a staple in our household now!  We have given you some options whether or not to use grapes or apple, and walnuts or almonds…you can literally make this chicken salad using any and/or  all of the following ingredients.

Ingredients:

6 oz. cubed chicken breast (grilled is especially yummy!)

1 cup plain Greek yogurt

1/2 cup sliced celery

1/2 cup grapes sliced in half (green or red) or 1/2 cup cubed apple

1/4 cup sliced onion

3 tablespoons crushed walnuts or sliced almonds (optional)

2 teaspoons cumin

Kosher sea salt and pepper to taste

Directions:

Mix all ingredients together.   That’s it!  Did we mention how easy and fast this recipe is?   And oh yes, yummy too!
