If your a pasta lover your going to LOVE this guilt free recipe. Growing up with 4 siblings spaghetti was a staple on our dinner menu. So I was so excited when I found a guilt free alternative to using pasta that hearty, delicious and super fun to make!
Start off by poking holes in your Spaghetti Squash and place in the oven for an hour at 350 degrees. Make sure to poke the holes in the Squash so it doesn’t explode 😉
Short on time? Make your Spaghetti Squash in the microwave! Microwave 10 to 12 minutes, then let stand for 5 minutes or so afterward to finish steaming.
Just remember, even in the microwave, it’s still super important to poke holes in the squash with a knife before hand ~ otherwise this easy dish will turn into a squash nightmare!
While your Squash is cooking, time to make your sauce!
If you want to use Turkey, break up half a package of ground turkey, cooking it stove top until brown and cooked through. After blending the sauce below mix everything together to top your squash.
No Turkey? No problem! Keep it simple, light ~ and Vegan ~ with these 6 ingredients for a delicious tomato sauce! We also love edamame on top!!!
1 Tbsp Minced Garlic
3 Roma tomatoes, quartered
1/4 cup fresh oregano, chopped
1/2 teaspoon sea salt
2 tablespoons of olive oil
Freshly ground pepper to taste
Place everything in the blender ~ except the turkey, if using 🙂 ~ on low! Just a few pulses will give you that great, rustic consistency. Just be sure not over blend, keeping the sauce a little chunky amps up the yum factor 🙂
On the go? Grab a container of the Heart Healthy Spaghetti Sauce from your grocery store. If you’re buying pre-made sauce look for little to no added sugar, no preservatives and made with olive oil!
Warm up your sauce on low heat for a few minutes while you make your spaghetti. This is the fun part…Take your baked squash out of the oven and carefully cut in half. Grab a fork and scrape through the flesh to create noodle like strings! Keep going all the way through until you get to the skin
Serve inside your squash for a fun dish~ You can control how much red sauce you want on top– WE LOVE RED SAUCE! Top with fresh basil.
Note: Enjoy this recipe for lunch! Spaghetti squash still contains carbs so you don’t want to eat it before bed when your trying to get bikini ready 🙂
