Guilt Free Banana-Oat-Greek Yogurt Muffins

Hope everyone is having a FABulous week and enjoying this crisp, Fall weather!

I wanted to share a really delicious, quick recipe with you that is not only healthy but it makes your kitchen smell heavenly!

You will think you are indulging in something that you should feel guilty about eating, but let me assure you, it is very healthy and loaded with lots of good nutrition!  Are you ready to be wow’d?!!!

Happy-Healthy-Banana-Oat-Greek Yogurt Muffins

Ingredients:

1 cup plain non-fat Greek Yogurt
2 ripe bananas
2 eggs
2 cups rolled oats (old fashioned or quick – your choice!)
1/4 cup brown sugar
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup dark chocolate chips (mini or regular)
Directions:
Preheat oven to 400 degrees and prepare a muffin tin by spraying cups with cooking spray or you may line them with paper liners.
Add ALL ingredients except for chocolate chips to a blender or food processor and process on high until oats are broken down and batter is smooth and creamy.  Stir in chocolate chips by hand
Pour batter into prepared muffin tin, filling each cup until it is 3/4 full.  Optional: sprinkle a few chocolate chips over the top of each muffin.
Bake for 15-20 minutes, until the tops of your muffins are set and a toothpick inserted into the middle comes out clean.  Allow muffins to cool in tin for 10 minutes before removing them.
Store in an air-tight container for up to a week!
