Happy Tuesday everyone! We here at GetFitNow are super excited to share our favorite Avocado Recipes with you today!
Personally, I like to call Avocados, “Nature’s butter.” I mean, it basically is right? While being healthy for you, they still have the creamy buttery texture that you could easily spread over a slice of toast. Avocados are packed with nutrients and are a source of good fats. They also help fight body fat! I’m always excited to find new ways I can use avocados in my cooking.
If you’re new to the world of avocados or just want to find a new way to enjoy its awesomness, here are 4 awesome recipes you should try!
– Half of an avocado
– 1/2 tsp of lemon juice
– 1 tsp of shallots (diced)
– 3 hard-boiled egg whites (chopped)
– 1 slice of Ezekiel bread (toasted)
– 1 tsp of organic Dijon mustard
– pepper and paprika to taste
Mash the avocado in a small bowl and mix in the lemon juice. Spread the avocado on the toast along with a dash of paprika. Mix the egg whites, Dijon mustard, and shallots together and spread over the avocado. Sprinkle some pepper over to taste.
In the picture, the eggs are cooked by poaching. You can use this technique or if you’re not sure how to, just follow the recipe for a simpler presentation.
– 1 cup of shredded chicken
– 2 whole wheat tortillas
– coconut oil
– 1/2 avocado (diced)
– 1/4 cup of Parmesan cheese
– 1 tbsp of cilantro (chopped)
Aside from the tortillas and coconut oil, mix all of the ingredients together. Spread half the mixture on one tortilla and roll it up into a burrito. Do the same for the second burrito.
Heat up a non-stick skillet to medium heat and spray with coconut oil. Place the burritos on the pan and cook for a couple minutes or until they start browning. Make sure to flip the tortillas for even distribution.
Zucchini Noodles with Creamy Avocado Sauce
– 1 zucchini (large)
– 4 oz of cubed roasted chicken (boneless and skinless)
– 1/4 avocado
– handful of cherry tomatoes (halved)
– 1 cup of cilantro (chopped)
– 1/4 cup basil (chopped)
– 1/4 cup of chicken broth
– 1 tsp garlic (crushed)
– 1 tbsp lemon juice
– 2 tsp Parmesan cheese (grated)
Use a vegetable peeler (mandoline) to slice the zucchini into very thin strips (lengthwise) to resemble noodles. Steam the noodles for about 3 minutes. In a food processor, blend the rest of the ingredients together, except for the chicken. Once smoothly blended, pour the mixture over the zucchini noodles and toss in the chicken. Top it off with the cherry tomatoes.
Avocado Ice cream
– 1 avocado
– 1 packet of stevia
– 1 banana
– 1/4 a lemon
Blend all of the ingredients until smooth and pour into a small container or bowl. Squeeze the lemon juice over the mixture and stir. Next, place it in the freezer for an hour or less if you want a creamy consistency. After, take out and enjoy!
